For the Crust:
- 4 cod fillets (6 oz each)
- 2 tbsp olive oil
- 3 cloves garlic (minced)
- 1 lemon (sliced)
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley (chopped)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place cod fillets on the baking sheet. Drizzle with olive oil and rub minced garlic over each fillet.
- Sprinkle with oregano, salt, and black pepper. Top each fillet with lemon slices.
- Bake for 15-18 minutes, or until the fish flakes easily with a fork.
- Garnish with fresh parsley before serving.
