For the Crust:
- 2 cups fresh strawberries, hulled and sliced
- 1 pre-made pie crust
- 1 cup granulated sugar
- 3 tablespoons cornstarch
- 1/2 cup water
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- Whipped cream for topping (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Press the pie crust into a 9-inch pie dish and crimp the edges. Bake for 10-12 minutes until lightly golden. Let cool.
- In a saucepan, combine sugar, cornstarch, water, and lemon juice. Cook over medium heat, stirring constantly, until the mixture thickens and becomes clear.
- Remove from heat and stir in vanilla extract. Gently fold in strawberries until coated. Pour the mixture into the cooled pie crust. Chill for at least 2 hours before serving. Top with whipped cream if desired.
