For the Crust:

  • 2 cups fresh strawberries, hulled and sliced
  • 1 pre-made pie crust
  • 1 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • Whipped cream for topping (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Press the pie crust into a 9-inch pie dish and crimp the edges. Bake for 10-12 minutes until lightly golden. Let cool.
  2. In a saucepan, combine sugar, cornstarch, water, and lemon juice. Cook over medium heat, stirring constantly, until the mixture thickens and becomes clear.
  3. Remove from heat and stir in vanilla extract. Gently fold in strawberries until coated. Pour the mixture into the cooled pie crust. Chill for at least 2 hours before serving. Top with whipped cream if desired.
