Blackberry Pistachio Dream Bars

A delightful dessert with a buttery crust, sweet blackberry filling, and crunchy pistachio topping.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 teaspoon salt
  • 1 cup blackberry jam
  • 1/2 cup chopped pistachios
  • 1/2 cup shredded coconut
  • 1/4 cup brown sugar

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan.
  2. In a bowl, mix flour, granulated sugar, and salt. Cut in butter until mixture resembles coarse crumbs.
  3. Press mixture into the prepared pan to form a crust. Bake for 15 minutes.
  4. Spread blackberry jam evenly over the warm crust.
  5. In a separate bowl, combine pistachios, coconut, and brown sugar. Sprinkle over the jam layer.
  6. Bake for another 15 minutes or until topping is golden brown. Let cool before cutting into bars.
