For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 1/4 teaspoon salt
- 1 cup blackberry jam
- 1/2 cup chopped pistachios
- 1/2 cup shredded coconut
- 1/4 cup brown sugar
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan.
- In a bowl, mix flour, granulated sugar, and salt. Cut in butter until mixture resembles coarse crumbs.
- Press mixture into the prepared pan to form a crust. Bake for 15 minutes.
- Spread blackberry jam evenly over the warm crust.
- In a separate bowl, combine pistachios, coconut, and brown sugar. Sprinkle over the jam layer.
- Bake for another 15 minutes or until topping is golden brown. Let cool before cutting into bars.
