For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 teaspoon salt
  • 1 cup blackberry jam
  • 1/2 cup chopped pistachios
  • 1/2 cup sweetened shredded coconut
  • 1/4 cup brown sugar
  • 2 tablespoons unsalted butter, melted

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  2. In a bowl, mix flour, granulated sugar, salt, and cold butter until crumbly. Press into the prepared baking dish.
  3. Bake the crust for 15 minutes until lightly golden.
  4. Spread blackberry jam evenly over the baked crust.
  5. In another bowl, combine pistachios, coconut, brown sugar, and melted butter. Sprinkle over the jam layer.
  6. Bake for another 15-20 minutes until the topping is golden and bubbly.
  7. Let cool completely before cutting into bars.
