For the Crust:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 2 cups fresh blueberries
- 1/2 cup brown sugar
- 1 cup boiling water
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9-inch square baking dish.
- In a bowl, whisk together flour, granulated sugar, baking powder, and salt.
- Stir in milk, melted butter, and vanilla extract until just combined. Spread batter into the prepared dish.
- Sprinkle blueberries evenly over the batter, then sprinkle brown sugar on top.
- Carefully pour boiling water over the entire mixture. Do not stir.
- Bake for 40-45 minutes until the top is golden and the pudding layer is bubbling. Let cool slightly before serving.
