For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 2 medium apples, peeled and diced
- 1/4 cup brown sugar
- 1 tsp ground cinnamon
- 1/2 cup caramel sauce
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into a 9-inch springform pan.
- Beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, then vanilla. Pour over crust.
- Bake 45-50 minutes until center is set. Cool completely.
- Cook apples, brown sugar, and cinnamon over medium heat until tender. Cool slightly, then spread over cheesecake.
- Drizzle with caramel sauce before serving. Refrigerate leftovers.
