For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 medium apples, peeled and diced
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/2 cup caramel sauce

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into a 9-inch springform pan.
  2. Beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, then vanilla. Pour over crust.
  3. Bake 45-50 minutes until center is set. Cool completely.
  4. Cook apples, brown sugar, and cinnamon over medium heat until tender. Cool slightly, then spread over cheesecake.
  5. Drizzle with caramel sauce before serving. Refrigerate leftovers.
