A delightful twist on classic cheesecake with the sweet flavor of carrots and a hint of cinnamon.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 tablespoons sugar
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup finely grated carrots
  • 1/2 teaspoon ground cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of the prepared pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla extract.
  4. Fold in grated carrots and cinnamon until well combined.
  5. Pour the cheesecake mixture over the crust and spread evenly.
  6. Bake for 30 minutes or until the center is set. Let cool completely before cutting into bars.
