For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 tablespoons sugar
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup finely grated carrots
- 1/2 teaspoon ground cinnamon
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of the prepared pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla extract.
- Fold in grated carrots and cinnamon until well combined.
- Pour the cheesecake mixture over the crust and spread evenly.
- Bake for 30 minutes or until the center is set. Let cool completely before cutting into bars.
