For the Crust:
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 6 large flour tortillas
- 2 tbsp vegetable oil
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 1/4 cup sour cream (optional)
- 1/4 cup chopped fresh cilantro (optional)
Instructions
1. Prepare the Crust:
- In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
- Add taco seasoning, onions, and bell peppers to the beef. Cook for 5 minutes until vegetables soften.
- Remove from heat and stir in both cheeses until melted.
- Spoon beef mixture onto the center of each tortilla. Fold sides inward, then roll tightly to form a burrito.
- Heat oil in a large skillet over medium-high heat. Fry chimichangas seam-side down for 2-3 minutes per side until golden brown and crispy.
- Drain on paper towels. Serve hot with sour cream and cilantro if desired.
