Cheesy Beef Chimichangas

Crispy flour tortillas stuffed with seasoned beef and melted cheese, fried to golden perfection.

For the Crust:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas
  • 2 tbsp vegetable oil
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 1/4 cup sour cream (optional)
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

1. Prepare the Crust:

  1. In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
  2. Add taco seasoning, onions, and bell peppers to the beef. Cook for 5 minutes until vegetables soften.
  3. Remove from heat and stir in both cheeses until melted.
  4. Spoon beef mixture onto the center of each tortilla. Fold sides inward, then roll tightly to form a burrito.
  5. Heat oil in a large skillet over medium-high heat. Fry chimichangas seam-side down for 2-3 minutes per side until golden brown and crispy.
  6. Drain on paper towels. Serve hot with sour cream and cilantro if desired.

Notes

You can customize the seasonings to taste.
