Delightful cupcakes with a perfect balance of tart lemon and sweet cherry flavors, topped with a creamy frosting.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1/2 cup chopped cherries (fresh or frozen)
  • 1 cup powdered sugar
  • 4 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 1/2 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. Beat in softened butter, eggs, milk, vanilla extract, lemon zest, and lemon juice until smooth.
  4. Gently fold in chopped cherries.
  5. Divide batter evenly among cupcake liners and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Let cupcakes cool completely before frosting.
  7. For the frosting, beat cream cheese, butter, and vanilla until smooth. Gradually add powdered sugar until fluffy.
  8. Frost cooled cupcakes and garnish with additional cherries or lemon zest if desired.
