For the Crust:
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 tbsp lemon zest
- 2 tbsp lemon juice
- 1/2 cup chopped cherries (fresh or frozen)
- 1 cup powdered sugar
- 4 oz cream cheese, softened
- 1/4 cup butter, softened
- 1/2 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- Beat in softened butter, eggs, milk, vanilla extract, lemon zest, and lemon juice until smooth.
- Gently fold in chopped cherries.
- Divide batter evenly among cupcake liners and bake for 18-20 minutes or until a toothpick comes out clean.
- Let cupcakes cool completely before frosting.
- For the frosting, beat cream cheese, butter, and vanilla until smooth. Gradually add powdered sugar until fluffy.
- Frost cooled cupcakes and garnish with additional cherries or lemon zest if desired.
