For the Crust:
- 1 cup unsalted butter
- 2 cups granulated sugar
- 1/2 cup cocoa powder
- 4 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp salt
- 1 cup maraschino cherries, drained and chopped
- 2 cups mini marshmallows
- 1/2 cup semi-sweet chocolate chips
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- In a saucepan, melt butter over low heat. Stir in sugar and cocoa powder until smooth. Remove from heat.
- Beat in eggs one at a time, then stir in vanilla extract.
- Gradually add flour and salt, mixing until just combined.
- Fold in chopped cherries and mini marshmallows.
- Spread batter evenly into the prepared pan. Sprinkle chocolate chips on top.
- Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Allow to cool completely before cutting into bars.
