For the Crust:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 tsp cinnamon
- 1/4 cup granulated sugar (for coating)
- 1 tsp cinnamon (for coating)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, cream together butter and 1/2 cup granulated sugar until light and fluffy. Add egg and vanilla, mixing well.
- Whisk together flour, baking powder, and salt in a separate bowl. Gradually add to the wet ingredients, mixing until combined.
- In another bowl, beat cream cheese, powdered sugar, and 1/2 tsp cinnamon until smooth.
- Roll dough into 1-inch balls, flatten slightly, and place on baking sheet. Make an indentation in the center of each with your thumb.
- Fill each indentation with about 1/2 tsp of the cream cheese mixture.
- Bake for 12-15 minutes until edges are golden. Let cool for 5 minutes.
- Mix 1/4 cup sugar and 1 tsp cinnamon in a shallow bowl. While still warm, roll the edges of each cookie in the cinnamon sugar mixture.
