A delightful fusion of churros, cheesecake, and donuts in cookie form, coated in cinnamon sugar for an irresistible treat.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp cinnamon
  • 1/4 cup granulated sugar (for coating)
  • 1 tsp cinnamon (for coating)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together butter and 1/2 cup granulated sugar until light and fluffy. Add egg and vanilla, mixing well.
  3. Whisk together flour, baking powder, and salt in a separate bowl. Gradually add to the wet ingredients, mixing until combined.
  4. In another bowl, beat cream cheese, powdered sugar, and 1/2 tsp cinnamon until smooth.
  5. Roll dough into 1-inch balls, flatten slightly, and place on baking sheet. Make an indentation in the center of each with your thumb.
  6. Fill each indentation with about 1/2 tsp of the cream cheese mixture.
  7. Bake for 12-15 minutes until edges are golden. Let cool for 5 minutes.
  8. Mix 1/4 cup sugar and 1 tsp cinnamon in a shallow bowl. While still warm, roll the edges of each cookie in the cinnamon sugar mixture.

You can customize the seasonings to taste.
