Cinnamon Cream Cheese Stuffed Cookies

Soft and chewy cookies with a sweet cinnamon cream cheese filling.

For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp ground cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, beat cream cheese, powdered sugar, and cinnamon until smooth. Chill for 30 minutes.
  3. In another bowl, cream butter, granulated sugar, and brown sugar until fluffy. Add eggs and vanilla, mixing well.
  4. Whisk flour, baking soda, and salt in a separate bowl. Gradually add to the butter mixture, mixing until combined.
  5. Take small portions of dough, flatten, and place a teaspoon of cream cheese filling in the center. Seal the dough around the filling and roll into a ball.
  6. Place cookies on baking sheets, spacing 2 inches apart. Bake for 12-15 minutes or until edges are golden. Cool on wire racks.
