For the Crust:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 3 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp ground cinnamon
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, beat cream cheese, powdered sugar, and cinnamon until smooth. Chill for 30 minutes.
- In another bowl, cream butter, granulated sugar, and brown sugar until fluffy. Add eggs and vanilla, mixing well.
- Whisk flour, baking soda, and salt in a separate bowl. Gradually add to the butter mixture, mixing until combined.
- Take small portions of dough, flatten, and place a teaspoon of cream cheese filling in the center. Seal the dough around the filling and roll into a ball.
- Place cookies on baking sheets, spacing 2 inches apart. Bake for 12-15 minutes or until edges are golden. Cool on wire racks.
