These protein-packed falafel balls combine cottage cheese with chickpeas for a light, crispy bite that’s air fryer friendly and perfect for snacking or meal prepping.

  • 1 cup low-fat cottage cheese
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons all-purpose flour
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon baking powder
  • Salt and pepper to taste
  • Olive oil spray for air frying

Instructions

  1. In a food processor, blend the cottage cheese, chickpeas, onion, garlic, parsley, and cilantro until mostly smooth but with some texture.
  2. Transfer to a bowl and stir in flour, cumin, coriander, baking powder, salt, and pepper.
  3. Chill the mixture in the refrigerator for 15-20 minutes.
  4. Preheat air fryer to 375Β°F (190Β°C).
  5. Form mixture into small balls (about 1-2 tablespoons each).
  6. Spray balls lightly with olive oil and place in air fryer basket in a single layer.
  7. Air fry for 10-12 minutes, flipping halfway, until golden and crispy.
  8. Serve with tahini or yogurt sauce.

Notes

For best results, use full-fat cottage cheese. Adjust spices to taste. Store leftovers in an airtight container in the fridge for up to 3 days.
