For the Crust:
- 1 lb fresh crab meat
- 1/2 cup breadcrumbs
- 1 egg, beaten
- 1/4 cup mayonnaise
- 2 tbsp fresh cilantro, chopped
- 1 tbsp lime zest
- 1 tbsp lime juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
Instructions
1. Prepare the Crust:
- In a large bowl, combine crab meat, breadcrumbs, egg, mayonnaise, cilantro, lime zest, lime juice, salt, and pepper.
- Form the mixture into 8 equal-sized patties.
- Heat olive oil in a skillet over medium heat.
- Cook the crab cakes for 3-4 minutes per side, until golden brown and crispy.
- Serve warm with a side of lime wedges and additional cilantro for garnish.
