A delicious fusion of banana pudding and cheesecake in easy-to-serve bar form.

For the Crust:
- 2 cups vanilla wafer cookies, crushed
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup mashed ripe bananas (about 2 medium)
- 1 box (3.4 oz) instant banana pudding mix
- 1 1/2 cups cold milk
- 1 cup whipped topping
- Additional vanilla wafers and banana slices for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- Mix crushed vanilla wafers with melted butter. Press firmly into the bottom of the prepared pan to form the crust.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla, mixing well after each addition.
- Spread cream cheese mixture over the crust. Bake for 20-25 minutes until set. Cool completely.
- Whisk pudding mix with cold milk for 2 minutes. Let stand 5 minutes to thicken. Fold in whipped topping.
- Spread pudding mixture over cooled cheesecake layer. Refrigerate at least 4 hours or overnight.
- Before serving, garnish with additional vanilla wafers and banana slices. Cut into bars.
