Creamy Banana Pudding Cheesecake Bars

A delicious fusion of banana pudding and cheesecake in easy-to-serve bar form.

For the Crust:

  • 2 cups vanilla wafer cookies, crushed
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup mashed ripe bananas (about 2 medium)
  • 1 box (3.4 oz) instant banana pudding mix
  • 1 1/2 cups cold milk
  • 1 cup whipped topping
  • Additional vanilla wafers and banana slices for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Mix crushed vanilla wafers with melted butter. Press firmly into the bottom of the prepared pan to form the crust.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla, mixing well after each addition.
  4. Spread cream cheese mixture over the crust. Bake for 20-25 minutes until set. Cool completely.
  5. Whisk pudding mix with cold milk for 2 minutes. Let stand 5 minutes to thicken. Fold in whipped topping.
  6. Spread pudding mixture over cooled cheesecake layer. Refrigerate at least 4 hours or overnight.
  7. Before serving, garnish with additional vanilla wafers and banana slices. Cut into bars.

Notes

You can customize the seasonings to taste.
