For the Crust:
- 2 cups butternut squash, cubed
- 1.5 lbs boneless, skinless chicken breasts, diced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1/2 cup shredded mozzarella cheese
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a baking dish with olive oil.
- In a large bowl, toss butternut squash with olive oil, salt, and pepper. Spread evenly in the baking dish.
- In the same bowl, mix diced chicken with garlic powder, thyme, and half the Parmesan cheese. Layer over the squash.
- Pour heavy cream evenly over the chicken and squash. Sprinkle remaining Parmesan and mozzarella on top.
- Bake for 25-30 minutes or until chicken is cooked through and cheese is golden brown.
- Let rest for 5 minutes before serving.
