For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup strong brewed coffee, cooled
  • 1 tbsp instant coffee granules
  • 1 cup sour cream

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C).
  2. Mix graham cracker crumbs and melted butter, then press into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each.
  4. Stir in vanilla extract, brewed coffee, and instant coffee granules until fully combined.
  5. Fold in sour cream, then pour the mixture over the crust.
  6. Bake for 50-55 minutes or until the center is set. Let cool, then refrigerate for at least 4 hours before serving.
