For the Crust:

  • 1 lb Italian sausage, casings removed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 2 cups fresh spinach

Instructions

1. Prepare the Crust:

  1. In a large pot, brown the Italian sausage over medium heat, breaking it into small pieces as it cooks.
  2. Add the onion, garlic, carrots, and celery. Cook until vegetables are softened, about 5 minutes.
  3. Pour in the chicken broth and bring to a simmer. Let cook for 10 minutes.
  4. Stir in the heavy cream, Parmesan cheese, oregano, and basil. Season with salt and pepper.
  5. Add the spinach and cook until wilted, about 2 minutes.
  6. Serve hot with additional Parmesan cheese if desired.
