For the Crust:
- 1 lb Italian sausage, casings removed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 2 cups fresh spinach
Instructions
1. Prepare the Crust:
- In a large pot, brown the Italian sausage over medium heat, breaking it into small pieces as it cooks.
- Add the onion, garlic, carrots, and celery. Cook until vegetables are softened, about 5 minutes.
- Pour in the chicken broth and bring to a simmer. Let cook for 10 minutes.
- Stir in the heavy cream, Parmesan cheese, oregano, and basil. Season with salt and pepper.
- Add the spinach and cook until wilted, about 2 minutes.
- Serve hot with additional Parmesan cheese if desired.
