Light and refreshing cucumber sandwiches perfect for tea time or a summer snack.

For the Crust:
- 8 slices white bread (crusts removed)
- 1 large cucumber (thinly sliced)
- 4 oz cream cheese (softened)
- 2 tbsp butter (softened)
- 1 tsp fresh dill (chopped)
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
1. Prepare the Crust:
- In a small bowl, mix cream cheese, butter, dill, salt, and pepper until smooth.
- Spread the cream cheese mixture evenly on each slice of bread.
- Layer cucumber slices on half of the bread slices, then top with the remaining slices to form sandwiches.
- Cut each sandwich into halves or quarters for serving.
- Serve immediately or chill for up to 1 hour before serving.
