Easy Coconut Cream Pie

For the Crust:

  • 1 pre-baked 9-inch pie crust
  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 3 cups whole milk
  • 4 large egg yolks, beaten
  • 1 teaspoon vanilla extract
  • 1 cup sweetened shredded coconut
  • 1 cup whipped cream
  • 1/4 cup toasted coconut flakes (for garnish)

Instructions

1. Prepare the Crust:

  1. In a medium saucepan, whisk together sugar, flour, and salt.
  2. Gradually stir in milk and beaten egg yolks. Cook over medium heat, stirring constantly, until the mixture thickens and boils.
  3. Remove from heat and stir in vanilla extract and shredded coconut. Let the filling cool slightly.
  4. Pour the filling into the pre-baked pie crust and smooth the top. Refrigerate for at least 4 hours or until set.
  5. Before serving, top with whipped cream and sprinkle with toasted coconut flakes.
