For the Crust:
- 1 pre-baked 9-inch pie crust
- 1 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 3 cups whole milk
- 4 large egg yolks, beaten
- 1 teaspoon vanilla extract
- 1 cup sweetened shredded coconut
- 1 cup whipped cream
- 1/4 cup toasted coconut flakes (for garnish)
Instructions
1. Prepare the Crust:
- In a medium saucepan, whisk together sugar, flour, and salt.
- Gradually stir in milk and beaten egg yolks. Cook over medium heat, stirring constantly, until the mixture thickens and boils.
- Remove from heat and stir in vanilla extract and shredded coconut. Let the filling cool slightly.
- Pour the filling into the pre-baked pie crust and smooth the top. Refrigerate for at least 4 hours or until set.
- Before serving, top with whipped cream and sprinkle with toasted coconut flakes.
