For the Crust:

  • 1 sheet puff pastry, thawed
  • 1/2 cup crumbled blue cheese
  • 1/4 cup chopped toasted walnuts
  • 1 tbsp fresh thyme leaves
  • 1 egg, beaten (for egg wash)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out the puff pastry sheet into a rectangle. Brush lightly with olive oil.
  3. Sprinkle blue cheese, walnuts, and thyme evenly over the pastry. Season with salt and pepper.
  4. Starting from the long edge, tightly roll the pastry into a log. Slice into 1-inch thick rounds.
  5. Arrange the rounds on the baking sheet, slightly overlapping. Brush with egg wash.
  6. Bake for 20-25 minutes until golden brown and puffed. Serve warm.

Notes

You can customize the seasonings to taste.
