For the Crust:
- 4 boneless, skinless chicken breasts
- 4 medium potatoes, diced
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C).
- In a large bowl, toss diced potatoes with 2 tablespoons olive oil, minced garlic, oregano, basil, salt, and pepper.
- Spread potatoes on a baking sheet and roast for 20 minutes.
- Meanwhile, coat chicken breasts with remaining olive oil and season with salt and pepper.
- Remove potatoes from oven, push to one side, and place chicken on the baking sheet.
- Sprinkle Parmesan cheese over potatoes and chicken.
- Return to oven and bake for 20-25 minutes until chicken is cooked through.
- Garnish with fresh parsley before serving.
