Garlic Parmesan Chicken and Potatoes

A flavorful one-pan dish with tender chicken and crispy potatoes coated in garlic and Parmesan.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 4 medium potatoes, diced
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss diced potatoes with 2 tablespoons olive oil, minced garlic, oregano, basil, salt, and pepper.
  3. Spread potatoes on a baking sheet and roast for 20 minutes.
  4. Meanwhile, coat chicken breasts with remaining olive oil and season with salt and pepper.
  5. Remove potatoes from oven, push to one side, and place chicken on the baking sheet.
  6. Sprinkle Parmesan cheese over potatoes and chicken.
  7. Return to oven and bake for 20-25 minutes until chicken is cooked through.
  8. Garnish with fresh parsley before serving.

Notes

You can customize the seasonings to taste.
