Garlic Parmesan Chicken and Potatoes

A flavorful one-pan dish featuring tender chicken and crispy potatoes coated in garlic and Parmesan.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 4 medium potatoes, diced
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, mix olive oil, garlic, Parmesan, oregano, basil, salt, and pepper.
  3. Add chicken and potatoes to the bowl, tossing to coat evenly.
  4. Spread the mixture on a baking sheet in a single layer.
  5. Bake for 25-30 minutes, or until chicken is cooked through and potatoes are golden.
  6. Garnish with fresh parsley before serving.
