Gingerbread Cake with Vanilla Glaze

For the Crust:

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1 large egg
  • 1/2 cup molasses
  • 1 cup hot water
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch square baking pan.
  2. In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, and cloves.
  3. In a large bowl, cream together butter and brown sugar until light and fluffy. Beat in the egg, then stir in the molasses.
  4. Gradually mix in the dry ingredients, alternating with the hot water, until smooth.
  5. Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  6. Let the cake cool completely before glazing.
  7. For the glaze, whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over the cooled cake.
