For the Crust:
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 cup unsalted butter, melted
- 3/4 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup buttermilk
- 1 1/2 cups diced apples
- 12 soft caramel candies
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, mix melted butter, brown sugar, egg, vanilla, and buttermilk until smooth.
- Gradually fold the dry ingredients into the wet mixture until just combined. Stir in diced apples.
- Fill each muffin cup halfway with batter. Place a caramel candy in the center, then cover with more batter.
- Bake for 18-20 minutes or until a toothpick comes out clean. Let cool before serving.
