Gooey Caramel Apple Buttermilk Muffins

For the Crust:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 1/2 cups diced apples
  • 12 soft caramel candies

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix melted butter, brown sugar, egg, vanilla, and buttermilk until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined. Stir in diced apples.
  5. Fill each muffin cup halfway with batter. Place a caramel candy in the center, then cover with more batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean. Let cool before serving.
