For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup brown sugar
  • 1 tbsp ground cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix melted butter, buttermilk, eggs, and vanilla extract. Pour into dry ingredients and stir until just combined.
  4. In a separate bowl, beat cream cheese, brown sugar, and cinnamon until smooth.
  5. Fill each muffin cup halfway with batter. Add a spoonful of cream cheese mixture, then top with remaining batter.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean. Let cool before serving.

You can customize the seasonings to taste.
