For the Crust:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, melted
- 1 cup buttermilk
- 2 large eggs
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup brown sugar
- 1 tbsp ground cinnamon
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt.
- In another bowl, mix melted butter, buttermilk, eggs, and vanilla extract. Pour into dry ingredients and stir until just combined.
- In a separate bowl, beat cream cheese, brown sugar, and cinnamon until smooth.
- Fill each muffin cup halfway with batter. Add a spoonful of cream cheese mixture, then top with remaining batter.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean. Let cool before serving.
