A tropical twist on classic carrot cake with pineapple for added sweetness and moisture.

For the Crust:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 3 eggs
- 1 cup vegetable oil
- 1 tsp vanilla extract
- 2 cups grated carrots
- 1 cup crushed pineapple, drained
- 1/2 cup chopped walnuts
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.
- Add eggs, oil, and vanilla. Mix until well combined.
- Fold in grated carrots, pineapple, and walnuts.
- Pour batter into prepared pan and bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Let cool before serving.
