For the Crust:
- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1/4 cup almond butter
- 1/2 cup unsweetened shredded coconut
- 1/2 teaspoon cinnamon
- 1/4 cup dark chocolate chips (sugar-free)
- 1 teaspoon vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix mashed bananas, almond butter, and vanilla extract until smooth.
- Add rolled oats, shredded coconut, cinnamon, and dark chocolate chips. Stir until well combined.
- Drop spoonfuls of the mixture onto the prepared baking sheet and flatten slightly with the back of a spoon.
- Bake for 15-20 minutes or until edges are golden brown.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
