Delicious no-bake cheesecake bars with a pistachio crust, creamy filling, and cherry topping.

For the Crust:
- 1 1/2 cups shelled pistachios
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 1 cup cherry pie filling
Instructions
1. Prepare the Crust:
- Line an 8×8 inch baking pan with parchment paper.
- In a food processor, pulse pistachios and granulated sugar until finely ground. Add melted butter and pulse until combined.
- Press the pistachio mixture firmly into the prepared pan to form the crust. Chill for 30 minutes.
- In a large bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form. Fold into the cream cheese mixture.
- Spread the cheesecake filling over the chilled crust. Top with cherry pie filling.
- Refrigerate for at least 4 hours or overnight before slicing into bars.
