Heavenly Cherry Pistachio Cheesecake Bars

Delicious no-bake cheesecake bars with a pistachio crust, creamy filling, and cherry topping.

For the Crust:

  • 1 1/2 cups shelled pistachios
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup cherry pie filling

Instructions

1. Prepare the Crust:

  1. Line an 8×8 inch baking pan with parchment paper.
  2. In a food processor, pulse pistachios and granulated sugar until finely ground. Add melted butter and pulse until combined.
  3. Press the pistachio mixture firmly into the prepared pan to form the crust. Chill for 30 minutes.
  4. In a large bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  5. In a separate bowl, whip the heavy cream until stiff peaks form. Fold into the cream cheese mixture.
  6. Spread the cheesecake filling over the chilled crust. Top with cherry pie filling.
  7. Refrigerate for at least 4 hours or overnight before slicing into bars.

Notes

You can customize the seasonings to taste.
