For the Crust:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 3/4 cup granulated sugar
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup fresh blueberries
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan.
- In a bowl, mix flour, 1/4 cup sugar, and butter until crumbly. Press into the prepared pan to form the crust.
- Bake crust for 15 minutes or until lightly golden.
- In another bowl, whisk eggs, 3/4 cup sugar, lemon juice, lemon zest, baking powder, and salt until smooth.
- Gently fold in blueberries. Pour mixture over the baked crust.
- Bake for 20-25 minutes or until the filling is set. Cool completely before cutting into bars.
