Homemade Lemon Blueberry Bars

A delightful dessert combining tangy lemon and sweet blueberries on a buttery crust.

For the Crust:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan.
  2. In a bowl, mix flour, 1/4 cup sugar, and butter until crumbly. Press into the prepared pan to form the crust.
  3. Bake crust for 15 minutes or until lightly golden.
  4. In another bowl, whisk eggs, 3/4 cup sugar, lemon juice, lemon zest, baking powder, and salt until smooth.
  5. Gently fold in blueberries. Pour mixture over the baked crust.
  6. Bake for 20-25 minutes or until the filling is set. Cool completely before cutting into bars.

Notes

You can customize the seasonings to taste.
