Honey Pineapple Chicken

A sweet and tangy chicken dish with honey-glazed pineapple for a tropical twist.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh cilantro (optional)

Instructions

1. Prepare the Crust:

  1. In a bowl, whisk together honey, soy sauce, olive oil, garlic powder, and ground ginger.
  2. Season chicken breasts with salt and pepper, then place in a resealable bag with half of the marinade. Refrigerate for at least 30 minutes.
  3. Heat a skillet over medium-high heat. Cook chicken for 6-7 minutes per side or until fully cooked.
  4. Add pineapple chunks and remaining marinade to the skillet. Cook for 2-3 minutes until pineapple is slightly caramelized.
  5. Garnish with chopped cilantro if desired and serve warm.

Notes

You can customize the seasonings to taste.
