For the Crust:
- 4 boneless, skinless chicken breasts
- 1 cup pineapple chunks
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon ground ginger
- Salt and pepper to taste
- 1 tablespoon chopped fresh cilantro (optional)
Instructions
1. Prepare the Crust:
- In a bowl, whisk together honey, soy sauce, olive oil, garlic powder, and ground ginger.
- Season chicken breasts with salt and pepper, then place in a resealable bag with half of the marinade. Refrigerate for at least 30 minutes.
- Heat a skillet over medium-high heat. Cook chicken for 6-7 minutes per side or until fully cooked.
- Add pineapple chunks and remaining marinade to the skillet. Cook for 2-3 minutes until pineapple is slightly caramelized.
- Garnish with chopped cilantro if desired and serve warm.
