Irresistible Boston Cream Pie Cupcakes

Delicious vanilla cupcakes filled with creamy custard and topped with rich chocolate ganache.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup whole milk
  • 1 cup vanilla custard or pudding
  • 4 oz semi-sweet chocolate, chopped
  • 1/2 cup heavy cream

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Whisk together flour, baking powder, and salt in a bowl. Set aside.
  3. Cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
  4. Alternately add dry ingredients and milk, beginning and ending with dry ingredients.
  5. Divide batter evenly among cupcake liners and bake for 18-20 minutes. Let cool completely.
  6. Use a small knife or cupcake corer to remove the center of each cupcake. Fill with custard.
  7. Heat heavy cream until simmering, pour over chopped chocolate, and stir until smooth. Spoon ganache over cupcakes.

Notes

You can customize the seasonings to taste.
