Irresistible Lemon Strawberry Cheesecake

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 1/4 cup sugar
  • 24 oz cream cheese, softened
  • 3/4 cup sugar
  • 3 eggs
  • 1/4 cup lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 2 cups fresh strawberries, sliced
  • 1/4 cup strawberry jam

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into a 9-inch springform pan.
  2. Beat cream cheese and 3/4 cup sugar until smooth. Add eggs one at a time, then mix in lemon juice, zest, and vanilla.
  3. Pour filling over crust. Bake for 45-50 minutes until center is set. Cool completely.
  4. Arrange strawberry slices on top. Warm strawberry jam and brush over strawberries.
  5. Chill for at least 4 hours before serving.
