For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 1/4 cup sugar
- 24 oz cream cheese, softened
- 3/4 cup sugar
- 3 eggs
- 1/4 cup lemon juice
- 1 tbsp lemon zest
- 1 tsp vanilla extract
- 2 cups fresh strawberries, sliced
- 1/4 cup strawberry jam
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F. Mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into a 9-inch springform pan.
- Beat cream cheese and 3/4 cup sugar until smooth. Add eggs one at a time, then mix in lemon juice, zest, and vanilla.
- Pour filling over crust. Bake for 45-50 minutes until center is set. Cool completely.
- Arrange strawberry slices on top. Warm strawberry jam and brush over strawberries.
- Chill for at least 4 hours before serving.
