Delightful cookie cups filled with creamy cheesecake and topped with fresh strawberries.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 cup fresh strawberries, diced
  • 1 tbsp strawberry jam

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a mini muffin tin.
  2. In a bowl, cream together butter and sugar. Add egg yolk and vanilla, then mix in flour until a dough forms.
  3. Press dough into the muffin tin to form small cups. Bake for 12-15 minutes until golden. Let cool.
  4. Beat cream cheese and powdered sugar until smooth. Spoon into cooled cookie cups.
  5. Top with diced strawberries and a drizzle of strawberry jam. Chill before serving.

Notes

You can customize the seasonings to taste.
