For the Crust:
- 4 large yellow bell peppers
- 1 lb boneless, skinless chicken breast, diced
- 1 cup fresh pineapple, diced
- 1/2 cup teriyaki sauce
- 1 tbsp olive oil
- 1/2 cup cooked rice
- 1/4 cup green onions, sliced
- 1 tsp garlic, minced
- 1 tsp ginger, grated
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds and membranes.
- In a skillet, heat olive oil over medium heat. Add chicken, garlic, and ginger. Cook until chicken is no longer pink.
- Stir in pineapple, cooked rice, and teriyaki sauce. Cook for 2-3 minutes until well combined.
- Stuff each bell pepper with the chicken-pineapple mixture. Place in a baking dish.
- Bake for 25-30 minutes until peppers are tender. Garnish with green onions before serving.
