For the Crust:

  • 4 large yellow bell peppers
  • 1 lb boneless, skinless chicken breast, diced
  • 1 cup fresh pineapple, diced
  • 1/2 cup teriyaki sauce
  • 1 tbsp olive oil
  • 1/2 cup cooked rice
  • 1/4 cup green onions, sliced
  • 1 tsp garlic, minced
  • 1 tsp ginger, grated

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds and membranes.
  2. In a skillet, heat olive oil over medium heat. Add chicken, garlic, and ginger. Cook until chicken is no longer pink.
  3. Stir in pineapple, cooked rice, and teriyaki sauce. Cook for 2-3 minutes until well combined.
  4. Stuff each bell pepper with the chicken-pineapple mixture. Place in a baking dish.
  5. Bake for 25-30 minutes until peppers are tender. Garnish with green onions before serving.
