For the Crust:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup crushed pineapple, drained
- 1/2 cup pineapple juice
- 1/2 cup shredded coconut (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Add softened butter, eggs, and vanilla extract. Mix until well combined.
- Fold in crushed pineapple and pineapple juice until the batter is smooth.
- Pour batter into the prepared cake pan and sprinkle shredded coconut on top if desired.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
