For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple, drained
  • 1/2 cup pineapple juice
  • 1/2 cup shredded coconut (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Add softened butter, eggs, and vanilla extract. Mix until well combined.
  4. Fold in crushed pineapple and pineapple juice until the batter is smooth.
  5. Pour batter into the prepared cake pan and sprinkle shredded coconut on top if desired.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
