For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup crushed pineapple, drained
  • 1/2 cup pineapple juice
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Add softened butter, eggs, crushed pineapple, pineapple juice, and vanilla extract. Mix until well combined.
  4. Pour batter into the prepared cake pan and smooth the top.
  5. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
