For the Crust:

  • 8 cannoli shells
  • 1 cup ricotta cheese
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup lemon curd
  • 1/2 cup heavy cream
  • 2 egg whites
  • 1/4 cup granulated sugar
  • 1 tsp lemon zest

Instructions

1. Prepare the Crust:

  1. In a bowl, mix ricotta cheese, powdered sugar, and vanilla extract until smooth.
  2. Fold in lemon curd and lemon zest gently.
  3. Whip heavy cream until stiff peaks form and fold into the ricotta mixture.
  4. Fill cannoli shells with the lemon ricotta mixture using a piping bag.
  5. In a clean bowl, beat egg whites until frothy. Gradually add granulated sugar and beat until stiff peaks form.
  6. Pipe or spoon meringue onto the ends of each cannoli.
  7. Use a kitchen torch to lightly brown the meringue or place under a broiler for 1-2 minutes.
  8. Serve immediately or chill until ready to serve.
