For the Crust:

  • 12 cannoli shells
  • 1 cup ricotta cheese
  • 1/2 cup mascarpone cheese
  • 1/2 cup powdered sugar
  • 1/4 cup lemon curd
  • 1 tsp lemon zest
  • 1 tsp vanilla extract
  • 2 egg whites
  • 1/4 cup granulated sugar
  • 1/4 tsp cream of tartar

Instructions

1. Prepare the Crust:

  1. In a bowl, mix ricotta, mascarpone, powdered sugar, lemon curd, lemon zest, and vanilla extract until smooth.
  2. Fill cannoli shells with the lemon ricotta mixture using a piping bag.
  3. In a separate bowl, beat egg whites with cream of tartar until soft peaks form. Gradually add granulated sugar and beat until stiff peaks form.
  4. Pipe or spoon meringue onto the ends of each cannoli.
  5. Use a kitchen torch to lightly brown the meringue.
  6. Chill for 30 minutes before serving.
