Lemon Zucchini Heaven Bread

For the Crust:

  • 2 cups grated zucchini
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 2 tablespoons lemon juice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, mix sugars, oil, eggs, vanilla, lemon zest, and lemon juice until well combined.
  4. Stir in grated zucchini, then fold in the dry ingredients until just combined.
  5. Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  6. Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
