For the Crust:
- 2 cups grated zucchini
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- 2 tablespoons lemon juice
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, mix sugars, oil, eggs, vanilla, lemon zest, and lemon juice until well combined.
- Stir in grated zucchini, then fold in the dry ingredients until just combined.
- Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted comes out clean.
- Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
