For the Crust:
- 2 cups grated zucchini
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup vegetable oil
- 2 large eggs
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- In a large bowl, mix together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together eggs, oil, lemon zest, and lemon juice. Stir in grated zucchini.
- Combine wet and dry ingredients, mixing just until moistened. Pour batter into prepared loaf pan.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes before transferring to a wire rack.
