Lemon Zucchini Heaven Bread

For the Crust:

  • 2 cups grated zucchini
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a large bowl, mix together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together eggs, oil, lemon zest, and lemon juice. Stir in grated zucchini.
  4. Combine wet and dry ingredients, mixing just until moistened. Pour batter into prepared loaf pan.
  5. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes before transferring to a wire rack.
