For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup crushed pistachios
  • 1/2 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 eggs
  • 1/4 cup lemon juice
  • 1/4 cup lime juice
  • 1 tsp vanilla extract
  • 1 cup cherry pie filling
  • 1/4 cup chopped pistachios for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C).
  2. Mix graham cracker crumbs, crushed pistachios, and melted butter. Press into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
  4. Stir in lemon juice, lime juice, and vanilla extract until fully combined.
  5. Pour the mixture over the crust in the springform pan.
  6. Bake for 45-50 minutes or until the center is set. Let cool, then refrigerate for at least 4 hours.
  7. Top with cherry pie filling and garnish with chopped pistachios before serving.

Notes

You can customize the seasonings to taste.
