A creamy and refreshing mango cheesecake with a buttery graham cracker crust.

For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 cups cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 cup mango puree
- 1/2 cup heavy cream
- 1 tbsp gelatin powder
- 1/4 cup water
Instructions
1. Prepare the Crust:
- Mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
- In a bowl, beat cream cheese, sugar, and vanilla until smooth.
- Dissolve gelatin in water, then heat until fully dissolved. Let cool slightly.
- Blend mango puree with heavy cream, then mix into the cream cheese mixture.
- Add the dissolved gelatin and mix well.
- Pour the filling over the crust and refrigerate for at least 4 hours or until set.
- Serve chilled, optionally garnished with fresh mango slices.
Notes
You can customize the seasonings to taste.
