Mango Cheesecake Delight

A creamy and refreshing mango cheesecake with a buttery graham cracker crust.


Ingredients

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 cups cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 cup mango puree
  • 1/2 cup heavy cream
  • 1 tbsp gelatin powder
  • 1/4 cup water

Instructions

1. Prepare the Crust:

  1. Mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  2. In a bowl, beat cream cheese, sugar, and vanilla until smooth.
  3. Dissolve gelatin in water, then heat until fully dissolved. Let cool slightly.
  4. Blend mango puree with heavy cream, then mix into the cream cheese mixture.
  5. Add the dissolved gelatin and mix well.
  6. Pour the filling over the crust and refrigerate for at least 4 hours or until set.
  7. Serve chilled, optionally garnished with fresh mango slices.

Notes

You can customize the seasonings to taste.
