Mini Caramel Apple Cheesecakes

Delightful individual cheesecakes with a spiced apple topping and caramel drizzle.


Ingredients

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 medium apples, peeled and diced
  • 1 tbsp butter
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup caramel sauce

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Line a muffin tin with paper liners.
  2. Mix graham cracker crumbs with melted butter. Press 1 tbsp into each liner to form crusts.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Divide mixture among cups.
  4. Bake for 20 minutes or until set. Cool completely.
  5. Sauté apples with butter and spices until tender. Spoon over cooled cheesecakes.
  6. Drizzle with caramel sauce before serving.

Notes

You can customize the seasonings to taste.
