For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups cherry pie filling
  • 1/2 cup old-fashioned oats
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. In a large bowl, mix flour, granulated sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs.
  3. Add egg and vanilla extract, mixing until dough comes together. Press half the dough into the prepared pan.
  4. Spread cherry pie filling evenly over the crust.
  5. Mix oats, brown sugar, and cinnamon with the remaining dough. Crumble over the cherry filling.
  6. Bake for 30-35 minutes or until golden brown. Let cool before cutting into bars.
