For the Crust:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 1 cup unsalted butter, cold and cubed
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups cherry pie filling
- 1/2 cup old-fashioned oats
- 1/4 cup brown sugar
- 1/2 teaspoon ground cinnamon
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
- In a large bowl, mix flour, granulated sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs.
- Add egg and vanilla extract, mixing until dough comes together. Press half the dough into the prepared pan.
- Spread cherry pie filling evenly over the crust.
- Mix oats, brown sugar, and cinnamon with the remaining dough. Crumble over the cherry filling.
- Bake for 30-35 minutes or until golden brown. Let cool before cutting into bars.
