Soft, chewy pretzels stuffed with gooey mozzarella cheese, perfect for snacking or as an appetizer.

For the Crust:
- 1 1/2 cups warm water
- 1 packet active dry yeast
- 1 tbsp sugar
- 4 cups all-purpose flour
- 1 tsp salt
- 2 tbsp unsalted butter, melted
- 8 oz mozzarella cheese, cut into sticks
- 1/2 cup baking soda
- 1 egg, beaten
- Coarse salt for topping
Instructions
1. Prepare the Crust:
- In a bowl, mix warm water, yeast, and sugar. Let sit for 5 minutes until foamy.
- Add flour, salt, and melted butter to the yeast mixture. Knead until smooth dough forms.
- Divide dough into 8 equal pieces. Flatten each piece and place a mozzarella stick in the center. Seal tightly.
- Bring a large pot of water to boil and add baking soda. Boil each pretzel for 30 seconds, then remove with a slotted spoon.
- Place pretzels on a baking sheet, brush with beaten egg, and sprinkle with coarse salt.
- Bake at 425°F for 12-15 minutes until golden brown. Serve warm.
