No-Bake Berry Cheesecake

A creamy and delicious no-bake cheesecake topped with fresh berries, perfect for any occasion.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 1/4 cup berry jam (for glaze)

Instructions

1. Prepare the Crust:

  1. In a bowl, mix graham cracker crumbs and melted butter until well combined. Press firmly into the bottom of a 9-inch springform pan to form the crust. Chill in the refrigerator for 15 minutes.
  2. In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  4. Pour the cheesecake filling over the chilled crust and spread evenly. Refrigerate for at least 4 hours or until set.
  5. Before serving, arrange the fresh berries on top of the cheesecake. Warm the berry jam slightly and drizzle over the berries for a glossy finish.
