For the Crust:
- 1 1/2 cups chocolate cookie crumbs
- 6 tablespoons melted butter
- 1 1/2 cups heavy cream
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 can (21 oz) cherry pie filling
- 1/2 cup chocolate shavings (for garnish)
Instructions
1. Prepare the Crust:
- Combine chocolate cookie crumbs and melted butter in a bowl. Press firmly into a 9-inch pie dish to form the crust. Chill for 15 minutes.
- In a large bowl, whip the heavy cream until stiff peaks form. Set aside.
- In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Gently fold in the whipped cream.
- Spread the cream mixture evenly over the chilled crust. Top with cherry pie filling.
- Refrigerate for at least 4 hours or overnight. Garnish with chocolate shavings before serving.
