A delicious twist on the classic pineapple upside-down cake, transformed into easy-to-serve bars with caramelized pineapple and cherries.

For the Crust:

  • 1/2 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1 can (20 oz) pineapple slices, drained
  • 1/2 cup maraschino cherries, halved
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. Pour melted butter into the prepared pan and sprinkle brown sugar evenly over the butter.
  3. Arrange pineapple slices over the brown sugar mixture and place cherry halves in the center of each pineapple ring.
  4. In a medium bowl, whisk together flour, granulated sugar, baking powder, and salt.
  5. Add milk, egg, and vanilla extract to the dry ingredients. Stir until just combined.
  6. Pour batter evenly over the pineapple layer and spread gently to cover.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool for 10 minutes, then invert onto a serving tray while still warm.
