Ravioli with Tomatoes and Asparagus

For the Crust:

  • 1 lb cheese ravioli
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp red pepper flakes
  • Salt and black pepper to taste
  • Fresh basil for garnish

Instructions

1. Prepare the Crust:

  1. Cook ravioli according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.
  3. Add asparagus and cook for 4-5 minutes until tender-crisp. Stir in cherry tomatoes and cook for another 2 minutes.
  4. Add butter to the skillet and let it melt. Toss in the cooked ravioli and gently stir to coat.
  5. Season with salt, black pepper, and red pepper flakes. Sprinkle with Parmesan cheese and garnish with fresh basil before serving.

Notes

You can customize the seasonings to taste.
