For the Crust:
- 1 lb cheese ravioli
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 3 tbsp butter
- 2 tbsp olive oil
- 1/4 cup grated Parmesan cheese
- 1/4 tsp red pepper flakes
- Salt and black pepper to taste
- Fresh basil for garnish
Instructions
1. Prepare the Crust:
- Cook ravioli according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.
- Add asparagus and cook for 4-5 minutes until tender-crisp. Stir in cherry tomatoes and cook for another 2 minutes.
- Add butter to the skillet and let it melt. Toss in the cooked ravioli and gently stir to coat.
- Season with salt, black pepper, and red pepper flakes. Sprinkle with Parmesan cheese and garnish with fresh basil before serving.
